Air Fryer Wings

Ingredients:

Approx 2.5 lb chicken wings

Dry Rub –

2 tbs Baking Powder
3 tsp Chili Powder
2 tsp cumin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder

Sauce –
2 tbs butter
1/4 c Honey
Juice from 1/2 lime
1 c of wing sauce – I used Meijer’s Spicy Garlic

Instructions:
1. Mix together all ingredients for dry rub
2. Place half of the wings in a gallon sized ziplock bag
3. Pour half the dry rub mixture over the wings
4. Repeat with remaining half of wings and dry rub
5. Zip bag and shake until wings are thoroughly coated
6. Generously spray air fryer with cooking spray
7. Place wings in air fryer
8. Set the temperature to 380 – no need to preheat
9. Set the timer to 25 min
10. Press start
11. While wings are cooking melt butter in a small saucepan over medium heat
12. Add all sauce ingredients
13. Stir until combined then remove from heat
14. When wings have finished frying, add them to a large bowl
15. Pour sauce over wings and toss until evenly coated

Sweet and Spicy Garlic Shrimp Marinade

Ingredients:

1 lb Medium Shrimp – Tail off, peeled and deveined
1 cup Extra Virgin Olive Oil (EVOO)
Juice of 1 Lemon
2 tbs minced garlic
1 tbs sriracha or your favorite hot sauce
2 tbs Chili Garlic Sauce 
1/4 c dried parsley
1/4 c brown sugar
2 tbs dried oregano
salt & pepper
Fruit/Veggies if you wish – I made some with pineapple, some with peppers and onion, and some alone

Recipe:

  1. Combine all ingredients in n a bowl
  2. Mix well
  3. Place shrimp in gallon sized ziplock bag
  4. Pour marinade over shrimp
  5. Shake to coat the shrimp (make sure it is zipped well!)
  6. Place in fridge for 30 min – 1 hour
  7. Put shrimp on skewers alone or with fruit/veggies of your choice. I like to use pineapple, pepper and onion!
  8. Place skewers on grill and lightly brush marinade on top
  9. Flip after about 5 mins & lightly brush marinade on other side
  10. Grill about 5 more mins

Garlic Mozz & Parm Brussels Sprouts

This is one of my favorite side dishes. It’s pretty easy to make too!

Ingredients:

1 lb Brussels Sprouts – rinsed, trimmed, and cut in half length wise
2 tbs Extra Virgin Olive Oil (EVOO)
2 tbs Melted Butter *I use I can’t believe it’s not butter, feel free to sub for whatever you use*
3 tbs minced garlic
1 1/2 cup Mozzarella
1 cup shredded Parmesan
Salt & Pepper to taste
cooking spray *Pro tip- you can use a couple drops of EVOO on your baking sheet and spread it very thinly with a paper towel if you don’t have cooking spray*

Recipe:

  1. Preheat Oven to 425 ° F
  2. In a bowl, combine the melted butter, EVOO, garlic, salt & pepper
  3. Add the Brussels Sprouts and toss until coated evenly
  4. Pour the brussels sprouts on greased baking sheet in a single layer *Pro Tip- line your baking sheet with aluminum foil for easy clean up! You should still use cooking spray or EVOO if you choose this option*
  5. Bake 20 mins or until fork-tender
  6. Add cheese on top and broil for 5 mins
